Ingredients

For the Skewers:

  • 1 lb shrimp, peeled and deveined

  • 1 lb beef steak (such as sirloin), cut into 1-inch cubes

  • 1 red bell pepper, cut into 1-inch pieces

  • 1 green bell pepper, cut into 1-inch pieces

  • 1 onion, cut into 1-inch pieces

  • 2 tbsp olive oil

  • Salt and pepper, to taste

For the Chimichurri Sauce:

  • 1 cup fresh parsley, chopped

  • 1/2 cup olive oil

  • 1/4 cup red wine vinegar

  • 4 cloves garlic, minced

  • 1 tsp red pepper flakes

  • Salt and pepper, to taste

Instructions

  1. Preheat your grill to medium-high heat.

  2. Prep the protein: In a large bowl, combine shrimp and beef cubes. Drizzle with olive oil, season with salt and pepper, and toss to coat.

  3. Assemble the skewers: Thread shrimp, beef, and chopped vegetables onto skewers, alternating for a colorful mix.

  4. Make the chimichurri: In a separate bowl, stir together the parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper. Adjust seasoning as desired.

  5. Grill: Place skewers on the grill and cook for about 8–10 minutes, turning occasionally, until shrimp are opaque and beef is grilled to your liking.

  6. Finish and serve: Remove skewers from the grill and drizzle with generous spoonfuls of chimichurri sauce. Serve immediately.

Tips & Serving Ideas

  • Serve with grilled bread or rice for a complete meal.

  • Want a little heat? Add extra red pepper flakes or a splash of hot sauce to the chimichurri.

  • Make it ahead: Chimichurri can be made a day in advance and stored in the fridge for even more flavor.
